We present an easy version of a cocktail featured on a new drinks list. Designed as a large-volume prepared mix that is loaded with tastes associated with holiday season, rendering it ideal for hosting a celebration. Save the extra cordial you can use for breakfast cocktails, puddings, or for more rounds of bikinis.
Bikini Recipe
Makes enough for 10 servings
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Combine the listed ingredients into a pot, heat until it reaches a gentle boil, stirring so the sugar melts. Next, remove from the stove allowing it to cool completely. Transfer to a sterilised bottle, seal and store chilled, it can be stored for around one month.
Preparing the Premix: Pour the specified liquid ingredients in a sizeable container, leave to sit for an hour, then filter it best through muslin, to ensure it's perfectly clear.
When ready to serve: Measure 85ml of your premix to a stirring glass filled with ice, and stir carefully for one minute to cool it down. Filter into a cold coupe glass or equivalent, garnish with some cranberries and complete it with a quick spritz with the mandarin essence over the drink.
